Recipe: Cauliflower Pizza

In our effort to spend more family time together we started a weekly family night. Games, Bowling, Movie or bike ride, no matter what we did it was disconnected from phones and ipads and always included a family meal. Since my kids got to pick the meal, it was usually pizza. When we started to eat clean we tried to clean up our Friday night pizza, which brought me searching online where I found Cauliflower pizza form PopSugar.com, and cauliflowers were on sale that week, so I had 2 already!

I was SUPER surprised and happy that the very first time the recipe was easy to follow and the pizza worked out as it should … even with the whole family involved. My husband got to work on his biceps when he grated the cauliflower, my kids got to design their own pizza (which they ate) and everyone was happy, and ate the pizza without any coaxing or complaints. My husband even said how surprised he was that it filled him up and tasted as good as real pizza.

The one thing I did find was the sauce did not really absorb into the crust. We fixed this by not adding sauce in future times, just a tiny bit of olive oil and my kids loved it even more!

CAULIFLOWER PIZZA RECIPE

INGREDIENTS

Nonstick spray
2 1/2 cups cauliflower, grated (about 1/2 a large head)
1 large egg, lightly beaten
1 1/4 cups shredded part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
Kosher salt and freshly ground black pepper
1/4 cup tomato sauce
1 cup grape tomatoes, sliced in half
2 cloves garlic, sliced
1/4 teaspoon crushed red pepper flakes
Fresh basil leaves, optional

DIRECTIONS

  1. Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF.
  2. Grate the cauliflower using a box grater until you have two cups of cauliflower crumbles. Place in a large bowl and microwave for seven to eight minutes, or until soft. Remove from the microwave and let cool.
  3. Mix in the egg, one cup mozzarella, parmesan cheese, and salt and pepper. Once combined, pat into a 10-inch round on the prepared pizza pan. Spray lightly with nonstick spray and bake for 10 to 15 minutes, or until golden.
  4. Top the pizza with the sauce, 1/4 cup mozzarella, grape tomatoes, garlic, and red pepper flakes. Bake in the oven until melted and bubbly, another 10 minutes. Top with basil before serving.
