I’m not a recipe maker, but my son’s easy pancake recipe is one I had to share.
We have a cottage and all summer we have guests constantly. We started with boxes of pre-made pancake mix, but quickly would go through one a weekend and be out. With the store being far away, we quickly found a easy recipe.
In a bowl make your pancake ‘mix’:
- 1 1/2 cup flour
- 3 1/2 tsp. baking powder
- 1 tsp salt
- 1 Tbsp sugar
Mix well and add your ‘wet’ ingredients
- 1 egg
- 1 1/4 cup milk
- 3 Tbsp butter (melted)
- 1-2 tsp vanilla
Mix together until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Brown on both sides and serve hot. If your in Quebec your probably having real maple syrup… but my kids sometimes will just put some butter on them and eat them like with their hands.
Get Creative with your Pancakes
Next is where it gets tricky. If you like your pancakes more of a french ‘crepe’ style you will want you batter runnier. If you like them thicker (as we do) then you’ll want a thicker batter. Add flour or milk to get the consistency you want. This is a easy pancake recipe and no matter how they try my kids have never messed it up.
Now is my daughters favorite part… dressing up the pancakes. There’s no secret pancake recipe to make the best pancakes, add whatever you want. I like to add bananas, my kids like chocolate chips, we have also added berries, cinnamon and whatever we can find.
