With 6 weeks at home with my kids and husband I am looking for some easy baking recipes that don’t require me to go to the store for special ingredients. During coronavirus self-quarantine I took the opportunity to make my kids aware of what goes into making food. Most importantly, I wanted my kids to be aware that they can create and enjoy food THEY make.
For those who know me, I love science. Since it is homeschooling, baking is science. Since we can’t eat most of the experiments Let’s Talk Science, we use baking to talk about science, math and even coding with kids… if you think of a recipe like programming.
Cooking from Your Pantry While at Home
Chocolate Cherry Scones
If you have read my previous posts you know I am a fan of Honest & Truly. It’s no surprise I have a few of her recipes in here. Her chocolate cherry scones are a favorite of mine because the kids love them and they are great with a coffee or tea and as a dessert.
If you don’t have dried cherries, no worries, you can use chocolate chips, other dried fruit (raisins, cranberries, blueberries, chopped mango). Michelle has made them with fresh blueberries and strawberries before too and they turned out great!

This Betty Crocker Banana Bread recipe is a keeper. I originally found this recipe in a cookbook from the 1970s and it has never let me down. You can make 2 loafs, or I usually make one loaf and 12-16 muffins, depending on the size.

Caterina’s Easy Chocolate Cake recipe is quick, easy and as an added bonus no eggs/milk, so it’s also vegan! If nothing else try it out of curiosity… wonder what a cake tastes like made with vinegar?

This soft pretzel recipe from Honest & Truly are the perfect cottage or self-isolation baking recipe. Requiring only one egg these are easy because you can use just water if needed. What is even better is that kids LOVE the fact that they can shape their own pretzels.

Growing up in Newfoundland, homemade bread and rolls was a staple. Most Newfoundland homes on Sunday made a batch of homemade bread that would last the week. Now living in Montreal, I can’t remember the last time I made bread, but my Newfoundland friend who has lived throughout the world shared this easy dinner roll recipe is fun for kids and parents. When I’m at the cottage, or in self isolation, it is fun to make and tastes amazing.
Bagels (Weight Watchers approved!)
My son LOVES bagels. I have seen him some mornings eat 3 bagels for breakfast! When we were confined to home for COVID-19 I didn’t want to be going to buy bagels every week, so I thought it would be a good experience for him to make them. We found Skinny Taste Bagel Recipe that is tasty and if you are doing Weight Watchers, it’s good for that. Note: You do need plain Greek yogurt, which you may not have.
