Hockey Snack: Power Cookies

So we all have that one Martha Stewart-ish friend. You know the one who always makes the perfect meal, has great ideas and makes it all look effortless! Well mine is Rena and she always has great recipes. She is also a hockey mom and knows that you need to feed your kiddos hockey snacks that will give them energy. When I asked her for ideas on what to make for a tournament weekend she suggested Power Cookies and Banana Bear Claw cookies. Well they were a HIT the weekend for kids and parents!

 

Here is her Power Cookie recipe:

 

Power Cookies 

2 ¼ cups Quick cooking oats
2 cups Spelt Flour (or Buckwheat Flour)
1 cup Sunflower seeds
¾ cup + 2 tbsp Pumpkin seeds
½ cup shredded unsweetened coconut
¼ cup Flax Seed (or hemp seeds)
1/2 cup brown sugar (or cane sugar) (If you have a real sweet tooth you can go up to 1 cup)
1 tbsp ground cinnamon
2 ¼ tsp Kosher or Sea Salt
1 ¾ cup dark chocolate chips
1 ¼ cup dried cranberries (or dried blueberries – I used half dried raisins/half dried cranberries)
¼ cup water
¼ molasses
¾ cup canola oil (flax oil or hempseed oil work as well)
1 cup Soy milk (vanilla or plain – I used coconut milk)Method:
Preheat oven to 350 F- line baking sheet with parchment paper
Combine all the dry ingredients in a large bowl
Combine all the wet ingredients and add to the dry ingredients
Mix together until just combined. Scoop onto the baking sheet, gently flatten cookies.
Bake for approx. 18- 22 minutes (until lightly browned, do not overcook, they are best moist and chewy)
