Run out of eggs? No worries you can still bake without eggs. Here are some great baking recipes that require no eggs.
During 2020 self-isolation from COVID-19, I ran out of eggs. The problem was we were isolating at our cottage which is about 40 minutes from a store. I got to thinking about what I could make that didn’t require eggs. Let’s be honest, I run out of eggs at summer at the cottage, at Christmas or during holidays… well quite a bit.
Here is what was suggested to me.
Replace the eggs
This was a popular answer. Rather than looking for a no egg recipe, find a replacement. One of the most popular replacement ideas was to use 1 Tablespoon of chia seeds mixed with 3 Tablespoons of water. Mix it together and let it sit for 15 to 20 minutes until it becomes gel. You can also prepare this the night before.
A popular vegan one is to replace 1 Tablespoon of flax seed mixed in water with eggs. Or the liquid from a can of chickpeas (Aquafaba) and it’s great for meringues. Here is instructions on how to use Aquafaba… I just like saying it.
The kitchn suggests egg replacement depends on the recipe. For egg whites they suggest agar powder mixed with water according to directions. For whole eggs in chewy baked recipes, use one ripe mashed banana for each egg. In generic recipes you can also use one tablespoon of applesauce. They also have suggestions for other replacement items like butter, milk and heavy cream.
Wacky cake
Wacky Cake became popular during World War II when rationing was at its peak. This popular chocolate cake is made with no eggs, milk or butter! When I asked around for recipes that require no eggs, this was the most popular. Brown Eyed Baker has a great and easy recipe.
Nutella No Bake Cookies
Mix the ingredients as they cook on the stovetop than lay out on parchment… can it get any easier? Nutella No Bake Cookies are great and keep for a long time in the fridge or freezer.
Newfoundland Snowballs
Newfoundland Snowballs are one of my favorites! They are easy to make, freeze well and kids LOVE making them. My kids love rolling the balls and getting their hands all dirty in the process. Here’s a good recipe from Rock Recipes.
Shortbread Cookies
These are a crowd pleaser. Michelle from Honest & Truly has some of the best recipes. Her recipe for chocolate dipped peppermint shortbread cookies are great for anytime of year. Make sure you read her protips before you start. If you are not a fan of peppermint, you can easily just omit the peppermint from the chocolate topping.
Cast Iron Skillet Hot Fudge Pudding Cake
Kim from Forever Green Mom has a great recipe with the added bonus of being made in a skillet. For her Cast Iron Skillet Hot Fudge Pudding Cake you mix and add layers to skillet and then bake. Can it get easier?
Pizza Dough
Although it’s not really baking, there are so many things you can make with pizza dough, I had to add it. Being from Newfoundland we make toutans, which is basically fried dough.
